Boxty Pancakes
A traditional Irish recipe where equal amounts of flour, cooked potatoes, and raw potatoes are mixed together and fried. Traditionally served on St. Bridget's Day. The following recipe was found in the 1992 edition of The Festive Food of Ireland by Darina Allen. Serves 4-6.
Boxty Ingredients
- 225g/8 oz freshely cooked potatoes
- 225g/8 oz peeled raw potatoes
- 225g/2 cups of white flour
- 1/2 tsp/1/4 tsp bicarbonate of soda
- 225-350ml/8-12 fl oz/1 - 1 1/2 cups of buttermilk
- pinch of salt (optional)
- butter for frying
Preparing Your Boxty Pancakes
- Peel the cooked potatoes while still hot and mash in a bowl.
- Grate the raw potatoes and add to the mash with the sieved flour and soda. Add salt if desired.
- Mix well and add enough buttermilk to make a stiff batter.
- Heat a frying pan, grease with butter and cook large or small pancakes in the usual way.
- Eat the pancakes straight form the pan with butter, crispy rashers or pure Irish honey.
