Irish Stew

Meal (does not depict recipe shown)This stew, cooked long and slow, will bring out the flavor of the meat and the essence of Ireland.

Irish Stew Ingredients

  • 4 shoulder chops or 2 pounds of mutton
  • 2 cups or 1 pound of potatoes
  • 6 onions (medium sized)
  • 2 cups or 3/4 pint cold water
  • seasoning
  • parsely (finely chopped)

Preparing Your Irish Stew

Preparation time will take about 20 minutes. Cooking time is 2 hours. Approximately 4 servings.

Prior to cutting the meat into pieces, trim all the visible fat.

Wash potatoes and peel. If large potatoes are used, cut into two or leave whole if using smaller potatoes. Thinly slice one of the potatoes. Next, peel your onions, chopping up one of the onions.

In a heavy saucepan, place the meat in first, then add the sliced potato and onion. Add seasoning to taste, and then add the water. Bring this to a boil and skim. Cover and let simmer for 1 hour. Next, add the rest of the onions and potatoes, cover again, and gently simmer for another hour. When serving, place the meat in the center of the dish and arrange the onions and potatoes around the meat. Add a small amount of sauce over the meat and vegetables. The rest of the sauce can then be served in a gravy dish. Don't forget to add your finely chopped parsley as the garnish. Enjoy!
