Irish Plum Cake
This is an old family favorite. In the case of this Irish Plum Cake, the "plum" refers to the sultanas or golden raisins in the cake.
Irish Plum Cake Ingredients
- 8 ounces of butter
- 8 ounces of sugar
- 3 eggs
- 3/4 tsp. of almond extract
- 3 tbsp. of Lyle's Golden syrup
- 3 ounces of almonds (finely ground)
- 4 cups of white flour (unbleached)
- 1 tsp. of baking soda
- A pinch of salt
- 12 ounces of milk
- 2 cups of sultanas or golden raisins
- 2 1/2 cups of currants
- Grated rind of 3 oranges
- Grated rind of 2 lemons
Preparing and baking your Irish Plum Cake
In a mxing bowl, combine the butter with the sugar and cream until fluffy. One at a time, add the eggs, beating well after adding each one. Next beat in the almond extract, the ground almonds and the syrup. Set aside a half of a cup of the flour, then sift the rest of the flour with the baking soda and the salt. Then add the flour mixture to the butter mixture alternately with the milk and beat well after adding each. Use the remaining half cup of flour to coat the sultanas and currants, then fold into the batter with the grated lemon and orange peels. Mix thoroughly and pour into a generouly greased tube pan, spreading the batter evenly in the pan. Bake at 300° Fahrenheit for approximately 1-1/2 to 1-3/4 hours. After baking, allow the pan cool for about 40 to 45 minutes before turning the cake onto a cake rack to cool completely.
