Irish Loin of Pork

Irish Loin of Pork Ingredients
- 1 pound boneless pork loin
- 1/2 cup Olive oil
- 1/2 cup fresh chopped parsley
- 3 tablespoons olive oil
- 1/4 cup minced onion
- 3/4 cup dry Sherry
- 1/4 cup lemon peel, finely grated
- Fresh parsley sprigs
- 1 tablespoon basil, chopped fresh - for garnish
- 3 garlic cloves, crushed
- Sliced lemon - for garnish
Preparing Your Irish Loin Of Pork
Pat the pork dry and score well with a sharp knife. In small bowl, combine parsley, onion, peel, basil and garlic. Whisk in 1/2 cup oil. Rub into the pork. Wrap in foil and refrigerate overnight. Before roasting, allow pork to stand at room temperature for one hour. Preheat oven to 350 degrees. Brush the pork with the remaining 3 tablespoons olive oil and set on a rack in shallow pan. Roast until meat thermometer inserted in thickest part of meat registers 170 degrees, approximately 2 1/2 hours. Set aside the meat. Next, remove grease from pan juices and blend in the Sherry. Cook over low heat 2 minutes. Pour into gravy dish. Transfer the pork to a platter and garnish with fresh parsley and lemon slices. Pass sauce separately.
