Stew Recipe 2
There are many ways to cook Irish Stew. This particular recipe is hearty, traditional and simple to make. The key to a stew full of flavor and just the right tenderness is to be sure to cook it slowly over a low heat.
Irish Stew Recipe Ingredients
- 2 1/2 pounds of boned mutton
- 4 large potatoes
- 2 large onions
- 3-4 medium carrots
- salt & pepper
- parsely sprig
- 2 cups of water
Preparing Your Irish Stew
Preparation time will take about 20 minutes. Cooking time is 2 1/2 hours (unless made with lamb). Serves 4.
Trim the meat, leaving a little fat, then cut into chunks. Peel the vegetables and thickly slice. Chop up the parsley sprig. Using a heavy pot with tight fitting cover, add ingredients in layers, starting first and ending with the potatoes. Season to taste and add the water. Cover and simmer on very low heat for about 2 1/2 hours until the meat is nice and tender and the liquid has become thickened by the potatoes. This stew may also be made with lamb, and if used, cooking time takes approximately 1 1/2 hours. Serve with some fresh brown bread, (don't spare the butter) and a pint of Guinness. Enjoy!
